roasted brussels sprouts with cranberry

Ingredients

Yield: 8 Servings

    1. 3 lbs fresh Brussels sprouts, trimmed and halved
    2. 3 Tbsp olive oil
    3. 1 tsp kosher salt
    4. 1/2 tsp pepper
    5. 1/2 cup dried cranberries

Directions:

    1. Preheat oven to 425 degrees. Divide Brussels sprouts between two greased 15X10X1 inch baking pans. Drizzle with oil; sprinkle with salt and pepper. Toss to coat.
    2. Roast 20-25 minutes or until tender, stirring occasionally. Transfer to a large bowl; stir in cranberries.
