Chive Smashed Potatoes

Ingredients:

Yield: 8 servings

    • 4 lbs red potatoes, quartered (do not peel)
    • 2 tsp chicken bouillon granules
    • 1 carton (8 oz) spreadable chive and onion cream cheese
    • 1/2 cup half-and-half cream
    • 1/4 cup butter, cubed
    • 1 tsp salt
    • 1/4 tsp pepper

Directions:

    1. Place potatoes and bouillon in a Dutch oven and cover with 8 cups water.
    2. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender.
    3. Drain and return to pan.
    4. Mash potatoes with cream cheese, cream, butter, salt, and pepper.
