bratwurst hash

Ingredients:

Yield: 4 Servings

    • 4 uncooked bratwurst links, casings removed
    • 1 medium green pepper, chopped
    • 1 pkg (20 oz) refrigerated diced potatoes with onions
    • 1 cup fresh or frozen corn, thawed
    • 1/4 cup chopped roasted sweet pepper
    • 1/4 tsp salt or 1/2 tsp seasoned salt
    • 3/4 cup shredded Colby-Jack cheese

Directions:

    1. In a large non-stick skillet, cook bratwurst and green pepper over medium heat for 4-6 minutes or just until sausage is no longer pink, breaking up the sausage into large crumbles.
    2. Stir in potatoes, corn, red pepper, and salt; spread evenly onto bottom of skillet. Cook 10 minutes without stirring. Turn mixture over; cook 7-8 minutes longer or until potatoes are tender. Sprinkle with shredded cheese.
