tortellini and chicken caesar salad

Total Time: 25 Minutes

Ingredients:

  • 1 pkg (20oz) refrigerated cheese tortellini
  • 1 lb boneless skinless chicken breasts, cut into 1 1/2 inch pieces
  • 1/3 cup finely chopped onion
  • 1 Tbsp olive oil
  • 2 garlic cloves, minced
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1 pkg (10oz) hearts of romaine salad mix
  • 1 1/2 cups grape tomatoes
  • 1 can (6 1/2 oz) sliced ripe olives, drained
  • 3/4 cup creamy Caesar salad dressing
  • 3/4 cup shredded Parmesan cheese
  • 6 bacon strips, cooked and crumbled

Yield: 6 Servings

Directions:

  1. Cook tortellini according to package directions. Drain; rinse with cold water.
  2. Meanwhile, in a small bowl, combine chicken, onion, oil, garlic, salt and pepper; toss to coat. Heat a large skillet over medium-high heat. Add chicken mixture; cook and stir 4-6 minutes or until chicken is no longer pink. Remove from heat.
  3. In a large bowl, combine salad mix, tomatoes, olives, tortellini and chicken mixture. Drizzle with salad dressing; toss to coat. Sprinkle with cheese and bacon. Serve immediately.
