Turkey Burgers with Peach Mayo

Ingredients:

- 1 1/2 tsp canola oil
- 2 small peaches, peeled and chopped
- 1/2 tsp minced fresh gingerroot
- 4 tsp reduced-sodium teriyaki sauce, divided
- 1/4 cup chopped red onion
- 1/2 tsp pepper
- 1/4 tsp salt
- 1 1/2 lbs lean ground turkey
- 1/3 cup fat free mayonnaise
- 4 multi-grain hamburger buns, split and toasted
- Optional toppings: lettuce leaves, red onion, tomato, sliced peaches
Yield: 4 Servings
Directions:
- In a skillet, heat oil over medium-high heat. Add peaches and ginger; cook and stir until peaches are tender. Add 1 tsp teriyaki sauce; cook 1 minute longer. Transfer to a small bowl; cool slightly.
- In a small bowl, combine onion, pepper, salt, and remaining teriyaki sauce. Add turkey; mix lightly but well. Shape into four patties.
- Moisten a paper towel with cooking oil; using long handled tongs, rub on grill rack to coat lightly. Grill burgers, covered, over medium heat or broil 4 inches from heat 5-6 minutes per side or until a thermometer reads 165 degrees.
- Stir mayonnaise into peach mixture. Serve burgers on buns with peach mayo and toppings as desired.
