Ingredients:

Yield: 8 servings

    • Pastry for single-crust pie (9 in)
    • 2 eggs
    • 1/2 cup sugar
    • 1 tsp ground cinnamon
    • 1/2 tsp salt
    • 1/2 tsp ground ginger
    • 1/8 tsp ground cloves
    • 1 16 oz can pumpkin
    • 1 16 oz can evaporated milk

Directions:

    1. Heat oven to 425 degrees.
    2. Beat eggs, then beat in remaining ingredients.
    3. Pour into pie crust.
    4. Bake 15 minutes. Reduce temperature to 350 degrees and bake 45 minutes.
    5. Refrigerate 4 hours.
