bacon breakfast sandwiches

Total time: 15 mins

Ingredients:

Yield: 2 servings

    • 1 Tbsp butter
    • 4 eggs
    • 2 Tbsp minced chives
    • 1 Tbsp water
    • 1/4 tsp salt
    • Dash pepper
    • 2 english muffins, split and toasted
    • 8 bacon strips, cooked and drained
    • 4 slices tomato
    • 4 slices American cheese
    • Additional minced chives, optional for garnish

Directions:

    1. In a large nonstick skillet, melt butter. Beat the eggs, chives, water, salt, and pepper; pour into skillet. Stir gently until eggs are set.
    2. Top each muffin half with bacon, eggs, cheese, and tomato.
    3. Place on a baking sheet. Broil 2-3 inches from heat for 1-2 minutes or until cheese is melted.
    4. Garnish with chives if desired.

*NOTE - square croissants (or any other bread) can be substituted for English muffins.  Be sure to add additional eggs when scrambling if the surface of chosen bread is larger than an English muffin.
