mango blueberry quinoa salad

Total Time: 20 Minutes

Ingredients:

Yield: 2 Servings

    • 1/2 cup quinoa, washed
    • 1 cup water
    • 1 mango, cut into cubes
    • 1 medium cucumber, cut into cubes
    • 1/2 cup blueberries
    • 1/4 cup dried cranberries
    • 1 1/2 Tbsp extra virgin olive oil
    • Juice from one lemon
    • 1 tsp orange marmalade
    • 10 basil leaves, finely chopped
    • Salt and pepper to taste

Directions:

    1. Boil the water in a medium skillet, add quinoa. Turn down the heat to medium, cover skillet and let simmer 10-12 minutes or until quinoa is cooked. Remove from heat and let quinoa cool to room temperature.
    2. Meanwhile, combine the fruits and cucumber in a medium bowl. In a separate bowl, whisk olive oil, lemon juice, and marmalade.
    3. When the quinoa has cooled, mix the basil with the dressing. Add 1/2 of the dressing to the quinoa, stir until blended. Combine the quinoa with the fruits and cucumber and serve immediately with the rest of the dressing.
