blueberry muffin french toast

Ingredients

Yield: 4 Servings

    • 4 jumbo blueberry muffins
    • 3 eggs
    • 3/4 cup refrigerated French vanilla nondairy creamer
    • 1/4 tsp ground cinnamon
    • 3 Tbsp butter
    • Confectioners' sugar, optional

Directions:

    1. Trim rounded tops off muffins. Cut remaining muffins crosswise into 1/2 inch slices.
    2. In a shallow bowl, whisk eggs, creamer, and cinnamon. In a large skillet, heat butter over medium heat.
    3. Dip both sides of muffin slices in egg mixture. Place in skillet; toast 2-3 minutes on either side or until golden brown.
    4. If desired, dust with confectioners' sugar.
