Ingredients:

Yield: 3 loaves

    • 1 can (15 oz) pumpkin
    • 4 eggs
    • 1 cup vegetable oil
    • 2/3 cup water
    • 3 cups sugar
    • 3 1/2 cups flour
    • 2 tsp baking soda
    • 1 1/2 tsp salt
    • 1 tsp ground cinnamon
    • 1 tsp ground nutmeg
    • 1/2 tsp ground cloves
    • 1/4 tsp ground ginger

Directions:

    1. Preheat oven to 350 degrees. Grease and flour three 7x3 loaf pans.
    2. In a large bowl, mix together pumpkin, eggs, oil, water and sugar until well blended.
    3. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.
    4. Stir the dry ingredients into the pumpkin mixture until just blended.
    5. Pour into the prepared pans. Bake in preheated oven for about 50 minutes.
    6. Loaves are done when toothpick inserted into the center comes out clean.
