chicken thighs with shallots and spinach

Total Time:  30 Minutes

Ingredients

Yield:  6 Servings

    • 6 boneless, skinless chicken thighs
    • 1/2 tsp seasoned salt
    • 1/2 tsp pepper
    • 1 1/2 tsp olive oil
    • 4 shallots, thinly sliced
    • 1/3 cup white wine
    • 1/4 cup fat free sour cream
    • 1/4 tsp salt
    • 1 pkg (10oz) fresh spinach

Directions:

    1. Sprinkle chicken with seasoned salt and pepper. In a large nonstick skillet coated with cooking spray, heat oil over medium heat. Add chicken; cook 6 minutes on each side or until a thermometer reads 170 degrees. Remove from pan; keep warm.
    2. In same pan, cook and stir shallots until tender. Add wine, sour cream, and salt. Bring to a boil; cook and stir 2-3 minutes or until sauce is slightly thickened. Add spinach; cook and stir just until spinach is wilted.
    3. Serve with chicken.
