Peach Oatmeal Muffins

- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar, packed
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted and cooled
- 1 cup sour cream
- 1 large egg, beaten
- 1 cup chopped fresh peaches
CINNAMON SUGAR

- 1/4 cup sugar
- 1 Tbsp cinnamon
Directions:
- Preheat oven to 400 degrees. Line a 12 cup standard muffin tin with 10 paper liners; set aside.
- Combine cinnamon and sugar in a small bowl; set aside.
- In a large bowl, combine flour, oats, brown sugar, baking powder, and salt. In another bowl, whisk together butter, sour cream, and egg. Pour mixture over dry ingredients and stir using a rubber spatula until just moist. Add peaches and gently toss to combine.
- Scoop batter evenly into muffin tray. Sprinkle with cinnamon sugar. Bake 16-18 minutes, or until a tester inserted in the center comes out clean.
