Autumn Pumpkin Chili

Ingredients:

Yield: 4 servings

    • 1 medium red onion, chopped
    • 1 small green pepper, chopped
    • 1 small yellow sweet pepper, chopped
    • 1 tbsp olive oil
    • 1 garlic clove, minced
    • 1 lb ground turkey
    • 1 can (15 oz) solid pack pumpkin
    • 1 can (14.5 oz) diced tomatoes, undrained
    • 4 1/2 tsp chili powder/li>
    • 1/4 tsp salt
    • 1/4 tsp pepper

Optional Toppings: shredded cheddar cheese, sour cream and sliced green onions

Directions:

    1. Sauté onion, green and yellow peppers in oil in a large skillet until tender.
    2. Add garlic; cook 1 minute longer.
    3. Crumble turkey into skillet. Cook over medium heat until meat is no longer pink. Do not drain.
    4. Transfer to slow cooker.
    5. Stir in pumpkin, tomatoes, chili powder, salt and pepper.
    6. Cover and cook on low for 7-9 hours.
    7. Serve with toppings of your choice.
