Ingredients:

Yield: 1 loaf

    • 3 ripe bananas
    • 1 cup sugar
    • 1/2 cup applesauce
    • 2 eggs
    • 1 tsp baking soda
    • 1 Tbsp baking powder
    • 1 tsp salt
    • 1 tsp vanilla extract
    • 2 cups flour

Optional Frosting:

    • 1/2 cup powdered sugar
    • 1/4 cup creamy peanut butter
    • 3 Tbsp milk

Directions:

    1. Place bananas in large bowl, mash with electric mixer. Stir in sugar; let stand 15 minutes.
    2. Add applesauce and eggs; beat well. Beat in baking soda, baking powder, salt, and vanilla; gradually beat in flour, mixing thoroughly.
    3. Coat a 9X5 inch loaf pan with cooking spray. Pour in batter.
    4. Bake at 350 degrees for 45 minutes or until a toothpick inserted in the center of loaf comes out clean. Remove from oven and let stand 10 minutes before removing from pan.
    5. For frosting, beat all ingredients until well blended. Frost bread when completely cooled.
