Banana Applesauce Bread

Ingredients:
Yield: 1 loaf

- 3 ripe bananas
- 1 cup sugar
- 1/2 cup applesauce
- 2 eggs
- 1 tsp baking soda
- 1 Tbsp baking powder
- 1 tsp salt
- 1 tsp vanilla extract
- 2 cups flour
Optional Frosting:

- 1/2 cup powdered sugar
- 1/4 cup creamy peanut butter
- 3 Tbsp milk
Directions:
- Place bananas in large bowl, mash with electric mixer. Stir in sugar; let stand 15 minutes.
- Add applesauce and eggs; beat well. Beat in baking soda, baking powder, salt, and vanilla; gradually beat in flour, mixing thoroughly.
- Coat a 9X5 inch loaf pan with cooking spray. Pour in batter.
- Bake at 350 degrees for 45 minutes or until a toothpick inserted in the center of loaf comes out clean. Remove from oven and let stand 10 minutes before removing from pan.
- For frosting, beat all ingredients until well blended. Frost bread when completely cooled.
