Slow Cooked Boston Beans

Ingedients:
- 1 lb dried Navy beans
- 1/4 lb sliced salt pork belly or bacon strips, chopped
- 1 1/2 cups water
- 1 medium onion, chopped
- 1/2 cup molasses
- 1/3 cup packed brown sugar
- 1/3 cup rum
- 2 tsp ground mustard
- 1/2 tsp pepper
Yield: 8 Servings
- Sort Navy beans and rinse in cold water. Place beans in a large bowl; add water to cover by 2 inches. Let stand, covered, overnight.
- Drain and rinse navy beans, discarding liquid. Transfer beans to a greased 3 quart slow cooker; add pork belly or bacon. In a small bowl, combine remaining ingredients. Stir into slow cooker.
- Cook, covered, on low 9-11 hours or until beans are tender.
