slow cooked boston beans

Total Time: 9 Hours 10 Minutes (overnight)
Prep Time: 10 Minutes + Soaking
Cook: 9 Hours

Ingedients:

  • 1 lb dried Navy beans
  • 1/4 lb sliced salt pork belly or bacon strips, chopped
  • 1 1/2 cups water
  • 1 medium onion, chopped
  • 1/2 cup molasses
  • 1/3 cup packed brown sugar
  • 1/3 cup rum
  • 2 tsp ground mustard
  • 1/2 tsp pepper

Yield: 8 Servings

  1. Sort Navy beans and rinse in cold water. Place beans in a large bowl; add water to cover by 2 inches. Let stand, covered, overnight.
  2. Drain and rinse navy beans, discarding liquid. Transfer beans to a greased 3 quart slow cooker; add pork belly or bacon. In a small bowl, combine remaining ingredients. Stir into slow cooker.
  3. Cook, covered, on low 9-11 hours or until beans are tender.
