cinnamon and sugar pancake muffins

Total Time:  25 Minutes + Cooling
Prep Time:  10 Minutes
Bake:  15 Minutes + Cooling

Ingredients

Yield:  1/2 Dozen

    • 1 cup all-purpose flour
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp Kosher salt
    • 2 Tbsp sugar
    • 2/3 cup buttermilk
    • 1 egg
    • 2 Tbsp butter, melted
    • 1/4 cup light brown sugar
    • 1 tsp cinnamon
    • Browned Maple Syrup (See Recipe)

Directions:

    1. Preheat oven to 350 degrees and lightly spray muffin tin (recipe makes 6, so only spray half!).
    2. In a small bowl, combine the cinnamon and brown sugar; set aside
    3. In a large bowl, mix the milk and lemon juice (or buttermilk), egg, and melted butter. Add flour, baking powder and soda, salt, and sugar; stir.
    4. Drop 2 Tbsp of batter into each sprayed muffin tin. Sprinkle each with a tsp of the cinnamon-sugar mix.
    5. Equally divide the remaining batter over the top of each muffin. Use a toothpick to swirl the batter. Sprinkle tops with some of the remaining cinnamon-sugar mix.
    6. Bake for 12-14 minutes. Brush each muffin top with Browned Maple Syrup; let cool for 10 minutes before removing from pan.
