Cinnamon & Sugar Pancake Muffins

Ingredients
Yield: 1/2 Dozen

- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp Kosher salt
- 2 Tbsp sugar
- 2/3 cup buttermilk
- 1 egg
- 2 Tbsp butter, melted
- 1/4 cup light brown sugar
- 1 tsp cinnamon
- Browned Maple Syrup (See Recipe)
Directions:
- Preheat oven to 350 degrees and lightly spray muffin tin (recipe makes 6, so only spray half!).
- In a small bowl, combine the cinnamon and brown sugar; set aside
- In a large bowl, mix the milk and lemon juice (or buttermilk), egg, and melted butter. Add flour, baking powder and soda, salt, and sugar; stir.
- Drop 2 Tbsp of batter into each sprayed muffin tin. Sprinkle each with a tsp of the cinnamon-sugar mix.
- Equally divide the remaining batter over the top of each muffin. Use a toothpick to swirl the batter. Sprinkle tops with some of the remaining cinnamon-sugar mix.
- Bake for 12-14 minutes. Brush each muffin top with Browned Maple Syrup; let cool for 10 minutes before removing from pan.
