Ingredients:

Yield: 16 servings

    • 1 1/2 cup sugar
    • 1 cup vegetable oil
    • 3 eggs
    • 2 cups flour
    • 1 1/2 tsp ground cinnamon
    • 1 tsp baking soda
    • 1 tsp vanilla
    • 1/2 tsp salt
    • 1/4 tsp ground nutmeg
    • 3 cups shredded carrots

Directions:

    1. Heat oven to 350 degrees.
    2. Grease pan with shortening, lightly flour.
    3. Mix oil, sugar, and eggs until blended.
    4. Stir in remaining ingredients except carrots. Beat one minute.
    5. Stir in carrots.
    6. Bake rectangle pan 40-45 minutes, round pan 30-35 minutes.
