Carrot Cake

- 1 1/2 cup sugar
- 1 cup vegetable oil
- 3 eggs
- 2 cups flour
- 1 1/2 tsp ground cinnamon
- 1 tsp baking soda
- 1 tsp vanilla
- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 3 cups shredded carrots
Directions:
- Heat oven to 350 degrees.
- Grease pan with shortening, lightly flour.
- Mix oil, sugar, and eggs until blended.
- Stir in remaining ingredients except carrots. Beat one minute.
- Stir in carrots.
- Bake rectangle pan 40-45 minutes, round pan 30-35 minutes.
