VEGGIE SESAME CHICKEN SALAD

Ingredients:

Yield: 4 servings

    • 1 pkg (5 oz) spring mix salad greens
    • 2 1/2 cups cubed or shredded rotisserie chicken
    • 1 can (8 oz) unsweetened pineapple chunks
    • 2 cups green onions, chopped
    • 1/2 cup carrots, shredded
    • 1/2 cup frozen shelled edamame, thawed
    • 1/2 cup sweet red pepper, chopped
    • 1/2 cup sesame ginger salad dressing
    • 1/2 cup wonton strips

Directions:

    1. Combine mixed greens, chicken, pineapple, and onions in a large bowl.  Add carrots, edamame, and red pepper.
    2. Toss with salad dressing; top with wonton.
