herbed noodles with edamane

Ingredients

Yield: 4 Servings

    • 3 1/2 cups uncooked egg noodles
    • 2 Tbsp butter
    • 1 green onion, sliced
    • 1 Tbsp sweet red pepper, finely chopped
    • 1/2 cup frozen shelled edamame, thawed
    • 1/4 cup reduced-sodium chicken broth
    • 1 Tbsp fresh parsley, minced
    • 1 1/2 tsp fresh majoram, minced
    • 1 1/2 tsp fresh chives, minced
    • 1 Tbsp olive oil
    • 1/4 cup Romano cheese, grated

Directions:

    1. Cook noodles according to package directions.
    2. Meanwhile, in a large skillet, heat butter over medium-high heat. Add onion and red pepper; cook and stir until tender. Stir in edamame and broth; heat through. Add herbs.
    3. Drain noodles and add to skillet; toss to combine.
    4. Transfer to a serving plate. Drizzle with oil and sprinkle with cheese.
