french toast breakfast wraps

Total Time: 15 Minutes

Ingredients:

    • 2 eggs
    • 1/2 cup 2% milk
    • 1 tsp cinnamon
    • 1/2 tsp ground nutmeg
    • Pinch of salt
    • 4 flour tortillas (8 inch)
    • 1 cup sliced fresh strawberries
    • 1 cup fresh blueberries
    • 2 ripe bananas, sliced
    • 1 1/2 cup vanilla yogurt
    • 1/2 cup granola
    • Confectioners' sugar

Yield: 2 Servings

Directions:

    1. In a shallow bowl, whisk the egg, milk, cinnamon, and nutmeg. Dip both sides of tortillas in egg mixture. In a nonstick skillet, cook tortillas in butter over medium-high heat for 2 minutes on each side or until golden brown.
    2. In a small bowl, combine the berries, banana, yogurt, and granola. Spoon mixture down the center of tortillas.
    3. Roll up; sprinkle with confectioners' sugar. Serve immediately.
