black eyed peas and pasta

Ingredients:

Yield: 6 servings

    • 1 cup green pepper, chopped
    • 1/2 cup onion, chopped
    • 1 jalapeno pepper, seeded and chopped
    • 3 garlic cloves, minced
    • 1 Tbsp olive oil
    • 1 can (28 oz) crushed tomatoes
    • 1 can (15 1/2 oz) black eyed peas, rinsed and drained
    • 1 - 3 Tbsp minced fresh cilantro
    • 1 tsp cider vinegar
    • 1 tsp sugar
    • 1/2 tsp pepper
    • 5 cups hot cooked bow tie pasta.

Directions:

    1. Saute green pepper, onion, jalapeno, and garlic in oil in a large skillet for 5 minutes or until tender.
    2. Add tomatoes; bring to a boil. Simmer, uncovered, for 10 minutes.
    3. Stir in peas, cilantro, vinegar, sugar, salt, and pepper; simmer 10 minutes longer.
    4. Toss with pasta.
