chocolate chip cranberry scones

Yield: 1 Dozen

Ingredients:

    • 2 cups all-purpose flour
    • 3 Tbsp brown sugar
    • 2 tsp baking powder
    • 1 tsp grated orange peel
    • 1/2 tsp salt
    • 1/2 tsp baking soda
    • 1/4 cup cold butter
    • 1 cup (8 oz) plain yogurt
    • 1 egg yolk
    • 1/2 cup dried cranberries
    • 1/2 cup semisweet chocolate chips

Directions:

    1. Preheat oven to 400 degrees. In a large bowl, whisk the flour, brown sugar, baking powder, orange peel, salt, and baking soda. Cut in butter until mixture resembles coarse crumbs.
    2. In another bowl, whisk yogurt and egg yolk; stir into crumb mixture just until moistened. Stir in dried cranberries and chocolate chips.
    3. Turn onto a floured surface; knead gently 10 times. Pat dough into an 8 inch circle. Cut into 12 wedges. Place on a baking sheet coated with cooking spray. Bake 10-12 minutes or until golden brown. Serve warm.
