strawberry and cantaloupe salad

Ingredients

Yield:  4 Servings

    • 1 cup sliced fresh strawberries
    • 1 cup cubed cantaloupe
    • 1/2 cup cubed mozzarella cheese
    • 2 Tbsp raspberry vinaigrette
    • 1/2 cup fresh raspberries
    • 1 Tbsp sunflower kernels
    • Thinly sliced fresh mint leaves, optional.

Directions:

    1. In a large bowl, combine strawberries, cantaloupe, and cheese. Drizzle with vinaigrette and toss to coat.
    2. Just before serving, gently stir in raspberries.
    3. If desired, sprinkle with mint.
