Portobello Fries with Basil Aioli

- 2 Portobello mushrooms
- 2 large eggs
- 1/2 cup bread crumbs
- 2 Tbsp grated Parmesan Cheese
- 1/4 tsp red crushed pepper flakes
- 1/8 tsp garlic powder
- 1/8 tsp oregano
- Salt and pepper to taste
Basil Aioli

- 2 Tbsp olive oil
- 1/4 cup packed fresh basil leaves
- 1/2 tsp lemon juice
- 1 medium garlic clove, pressed
- 1/4 tsp salt
- 1/2 cup mayonnaise
Directions:
- Preheat oven to 425 degrees. Spray a baking sheet lightly with cooking spray.
- In a shallow bowl, mix together the bread crumbs, Parmesan cheese, red crushed pepper, garlic powder, oregano, salt, and pepper.
- In a small bowl, beat the two eggs.
- Slice the Portobello mushrooms into 1/8 inch slices. Dip each slice in the egg mixture; coat with bread crumb mixture and place on the baking sheet.
- Bake for 10 minutes; flip, and bake for an additional 5 minutes.
- Meanwhile, add olive oil, basil, lemon juice, garlic, and salt to a blender. Blend until smooth, pausing to scrape down the sides with a spatula if needed.
- Place mayonnaise in a small bowl. Add basil mixture; stir to blend.
