Ingredients

Fries

    • 2 Portobello mushrooms
    • 2 large eggs
    • 1/2 cup bread crumbs
    • 2 Tbsp grated Parmesan Cheese
    • 1/4 tsp red crushed pepper flakes
    • 1/8 tsp garlic powder
    • 1/8 tsp oregano
    • Salt and pepper to taste

Basil Aioli

    • 2 Tbsp olive oil
    • 1/4 cup packed fresh basil leaves
    • 1/2 tsp lemon juice
    • 1 medium garlic clove, pressed
    • 1/4 tsp salt
    • 1/2 cup mayonnaise

Directions:

    1. Preheat oven to 425 degrees. Spray a baking sheet lightly with cooking spray.
    2. In a shallow bowl, mix together the bread crumbs, Parmesan cheese, red crushed pepper, garlic powder, oregano, salt, and pepper.
    3. In a small bowl, beat the two eggs.
    4. Slice the Portobello mushrooms into 1/8 inch slices. Dip each slice in the egg mixture; coat with bread crumb mixture and place on the baking sheet.
    5. Bake for 10 minutes; flip, and bake for an additional 5 minutes.
    6. Meanwhile, add olive oil, basil, lemon juice, garlic, and salt to a blender. Blend until smooth, pausing to scrape down the sides with a spatula if needed.
    7. Place mayonnaise in a small bowl. Add basil mixture; stir to blend.
