Mango Blueberry Quinoa Salad

Ingredients:

- 1/2 cup quinoa, washed
- 1 cup water
- 1 mango, cut into cubes
- 1 medium cucumber, cut into cubes
- 1/2 cup blueberries
- 1/4 cup dried cranberries
- 1 1/2 Tbsp extra virgin olive oil
- Juice from one lemon
- 1 tsp orange marmalade
- 10 basil leaves, finely chopped
- Salt and pepper to taste
Directions:
- Boil the water in a medium skillet, add quinoa. Turn down the heat to medium, cover skillet and let simmer 10-12 minutes or until quinoa is cooked. Remove from heat and let quinoa cool to room temperature.
- Meanwhile, combine the fruits and cucumber in a medium bowl. In a separate bowl, whisk olive oil, lemon juice, and marmalade.
- When the quinoa has cooled, mix the basil with the dressing. Add 1/2 of the dressing to the quinoa, stir until blended. Combine the quinoa with the fruits and cucumber and serve immediately with the rest of the dressing.
