Reuben Dip

Ingredients:

Yield: 8 servings

    • 1 tbsp butter
    • 2 green onions, chopped
    • 1 1/2 cups Muenster cheese, shredded
    • 4 oz cream cheese, cubed
    • 2 tbsp ketchup
    • 2 tsp Dijon mustard
    • 1/4 tsp pepper
    • 1/2 lb cooked corned beef, chopped
    • 1 cup sauerkraut, rinsed and well drained
    • Assorted crackers

Directions:

    1. Place butter in small microwave-safe bowl and microwave on high for 20 seconds or until melted. Add onions; cover and cook for 1 minute longer.
    2. Stir in cheese, ketchup, mustard and pepper.
    3. Cover and cook for 1 minute; stir.
    4. Cook 45 seconds longer. Stir in beef.
    5. Place sauerkraut in a microwave-safe 1 quart dish; top with beef mixture.
    6. Cover and microwave on high for 2-3 minutes or until heated through.
    7. Serve with crackers.
